Buffalo Chicken Mac and Cheese This is a great dish if you like buffalo chicken and mac and cheese. Shredding the chicken soaks up a lot more flavor, which will be explained in the recipe. Ingredients  2 large chicken breasts 2 1/2 cups chicken broth 4 cups of whole milk 16 ounces of macaroni pasta 2 tablespoons butter 2 tablespoons flour 1/2 teaspoon salt 1 tablespoon ranch powder 1/2 teaspoon smoked paprika  3 cups shredded cheddar cheese 1 cup shredded monterey jack cheese 2 ounces cream cheese 3/4 cup buffalo wing sauce 1/4 cup diced celery ( for topping) 2 tablespoons green onions (for topping) Directions 1. Boil the chicken breasts in water for 20 minutes. 2. In a large bowl, shred chicken with a powered hand mixer till it is well shredded, then add the buffalo sauce, stir and set aside.  3. Coconut Spinach Curry Chicken Good combination  of healthy ingredients! Ingredients 2 large chicken breasts, cut into 1/2 inch chunks 15 ounces fresh spinach 1 tablespoon garlic, minced 1 tablespoons white wine 1 can of coconut milk, 14 ounce 1 tablespoon curry (add 2 tablespoons for extra spicy) 1 teaspoon ginger 1/4 teaspoon pepper 1/4 teaspoon salt 1 medium onion, diced 1 bell pepper, diced 1 tablespoon olive oil 1/2 cup whipping cream 2 cups of cooked rice Directions  1. Heat a large skillet to medium high, add the olive oil and the chicken and cook till there is no more pink about 5-8 minutes. 2. Take chicken out of pan temporary and add the white wine to deglaze the pan and turn heat down slightly to medium. 3. Add garlic and stir and cook for about 1 minute. 4. Bacon Cheeseburger Pizza This is a very strange combination for a pizza, but I had a once at a restaurant chain and fell in love with the flavor. If you like cheeseburgers you will really like this! Ingredients 1 16 inch pizza crust 5 strips of cooked bacon 1/2 pound of cooked ground beef  1 cup of ketchup 1 tablespoon mustard  1 small onion, diced 1 tomato, diced 1 ounce package shredded cheddar cheese 3-4 pickles, sliced Directions 1. Preheat  oven to 425 degrees 2. In a small bowl, mix the ketchup and mustard together, then spread evenly all around the top of the pizza crust. 3. Top pizza with cheddar cheese. 4. Add the onions, ground beef, bacon, and pickles over the top of the cheese. 5. Bake for about 12-15 minutes minutes. 6. Top with tomatoes and slice and serve. Egg Rolls & Sweet and Sour Sauce I have always liked egg rolls, but it does take some time to roll them out. This recipe is for 20 egg rolls. Some brands of egg wrappers are thin and rip easy and I found Twin Dragon to be the best and I have never had one break or rip on me. Egg Rolls Ingredients  1 package of 20 egg roll wrappers 1 pound of ground pork 1 tablespoon minced garlic 1 tablespoon ginger 2 tablespoons soy sauce 2 tablespoons sesame seed oil 1/2 teaspoon pepper 1/4 cup sliced green onions 6 cups of fresh cabbage, grated 2 medium carrots, grated 1 beaten egg 2 cups of cooked white rice for a side (optional) oil for frying Instructions 1. Frita Cubana This is a very tasty hamburger that is very popular in Miami. It consists of ground beef, and chorizo on a hawaiian bun and topped with shoe string fries. To make this easy, I divided this up into 5 separate recipes. Hawaiian buns Ingredients 1/2 cup warm milk (around 110 degrees) 1/2 cup pineapple juice (around 110 degrees) 4 1/2 cups flour 2 large eggs 4 tablespoons butter 6 tablespoons sugar 1 1/2 teaspoons salt 2 1/4 teaspoons yeast 1 teaspoon olive  For baking 1 large egg 2 tablespoons water Directions  1. Combine all dry ingredients into your mixing bowl. 2. Put milk and pineapple juice and heat in micro wave for about 30 seconds on high, then let cool down to 110 degrees, then add your yeast and stir for about 1 minutes. Let sit for about 5 minutes. 4. Couscous Mediterranean Salad

Couscous Mediterranean Salad Great healthy dish if you have some couscous laying around. Ingredients 10 ounces cooked couscous 1 medium sliced cucumber  8-12 cherries tomatoes  1 red bell pepper, diced 8 ounce bag of fresh spinach 1 small red onion, diced 4 ounces of feta cheese, crumbled  1/2 cup black olives, sliced Dressing 1/4 cup olive oil 1 large lemon juiced 1/4 teaspoon pepper 1 tablespoon garlic, minced 1. Cook couscous, follower the directions on the box. Once cooked, remove from heat and let cool for 20 minutes. 2. Cook fresh spinach in pan with 2 tablespoons of water and cover for about 3 minutes till spinach is condensed down and wilty, then remove from heat at and set aside. 3. In a large bowl, combine all your ingredients, except for dressing and mix well. 4. In a small bowl, mix the dressing. 5. Plate and top with dressing and server. Stuffed Mac & Cheese Stuffed Meat Log This was a experiment recipe that turned out pretty good! I split this up into 3 different recipes to make it easier to follow. Make the mac and cheese first. Mac and Cheese Ingredients 4 tablespoons butter 4 tablespoons flour  1/2 teaspoon mustard powder 1/2 teaspoon paprika  1/4 teaspoon pepper 1/4 teaspoon cayenne pepper 1 tablespoon olive oil 1 teaspoon salt 8 ounces of cooked macaroni 2 1/2 cups whole milk 8 ounces cheddar shredded cheese 5 ounces of mozzarella shredded cheese   Directions 1. Cook the macaroni and follow the box instructions and pull off 2 minutes before the finished time, then drain and rinse with cold water, then add the olive oil so it does not stick and set aside. 2. Moroccan Chicken Tagine with Couscous Chicken Tagine is a traditional Moroccan dish of chicken with spices and lemons.  Ingredients  8 bone-in skin-on chicken thighs 2 cups chicken broth 1 lemon entirely zested  1 teaspoon paprika 1 teaspoon cumin 1/4 teaspoon cayenne pepper 1/2 teaspoon ginger 1/2 teaspoon coriander 1/4 teaspoon cinnamon 1/4 teaspoon salt 2 tablespoons flour 5  gloves minced garlic 1 tablespoons olive oil 2 tablespoons white wine 2 tablespoons honey 3 medium carrots cut in 1/2 inch coins 1 large sweet onion cut in half 1/4 inch slices 1/2 cup of pitted green olives cut in half 2 tablespoons of chopped fresh cilantro  1 cup of cooked Couscous (optional) 1. Crispy French Fries

Crispy French Fries Been experimenting for a long time on how to get nice crispy french and finally found the prefect solution! This is not easy and does take some time, but it is well worth it! Ingredients 6-8 large russet potatoes 1/4 cup sugar 1/4 cup salt Instructions 1. Peel and cut potatoes with a french fry cutter or knife into 1/4 long strips. 2. In food safe buck, fill 3/4 with water and put some ice in it to keep it cool and then put all your cut potatoes in it. 3. Add the sugar and salt into the potato bucket, stir and let soak for 3 hours. 4. Dump water out and spread all cut potatoes all out on a baking drying rack for 2 hours. 5. Heat oil in a fryer or in a pan to 370-375 degrees. 6. Cook fries in batches. 7. Start a batch and cook for 2 minutes, then pull up for 5 minutes. This will allow your oil to get up to temp again. Monte Cristo Deep Fried Burrito If you like Monte Cristo's, you will like this one! This was a experiment that turned out really good! Ingredients 8 ounces of sliced black forest ham 8 ounces of sliced turkey  8 ounces of provolone sliced cheese 10 inch flour tortilla's 1 tablespoon of mayonnaise 1 tablespoon dijon mustard  2 tablespoon powdered sugar  2 tablespoon of jelly of your choice  Directions 1. Heat oil to 370 degrees. 2. For each sandwich, take a tortilla, spread 1 tablespoon of dijon and mayonnaise and spread over onside of the tortilla, then take 2 slices each of turkey and ham, followed by on slice of provolone on top. 3. Roll the tortilla tight and fold over the sides. 4. Deep fry for 4 minutes, it will try to float to the top, so gently press down with a metal kitchen ladle or large serving serving spoon to keep submerged in the oil. 5. Gyro's and cucumber sauce  This is one of my favorite meals! The 2 things are not easy to find by me where I live, is pita bread and ground lamb, the pita bread I sometimes made, but not in this case and these did not have pockets in them.  The key to a prefect load, is to bake in a water bath with a kitchen towel on the bottom, which will evenly cook. I always use a meat thermometer, just makes it way easier, since I don't have to  check constantly to see when it is done and they sell for about $12-$20, which I highly recommend. This is a fairy easy recipe that anyone can make. Tomato Mirepoix Soup Been dealing with a bad cold and this was the perfect dinner and is very healthy! This was made with a basic mirepoix of carrots, onions and celery. I also transferred it to a crock pot and put it on low, so I could go back for more later. Pineapple Sweet Potato Chicken I  had some leftover pineapple and was trying to figure out how to use it, so I came up with this! Very healthy, delicious and heavy on the vegetable side. In this recipe, you are going to roast the sweet potatoes and carrots first. Ingredients  2 chicken breasts cut into 1/2 to inch chunks 2 large sweet potatoes, chopped into chunks 4 large carrots, chopped 1 red bell pepper, chopped 1 medium sweet onion, chopped 1 tablespoon of minced garlic 20 ounce can diced pineapple 1 cup pineapple juice (which you can get from the can) 1 cup orange juice 1/4 soy sauce 1/3 cup brown sugar 1/2 teaspoon ginger 1 teaspoon salt 4 tablespoons olive oil 2 cups of cooked rice (optional) 1.
