Coconut Spinach Curry Chicken



Good combination of healthy ingredients!

Ingredients
2 large chicken breasts, cut into 1/2 inch chunks
15 ounces fresh spinach
1 tablespoon garlic, minced
1 tablespoons white wine
1 can of coconut milk, 14 ounce
1 tablespoon curry (add 2 tablespoons for extra spicy)
1 teaspoon ginger
1/4 teaspoon pepper
1/4 teaspoon salt
1 medium onion, diced
1 bell pepper, diced
1 tablespoon olive oil
1/2 cup whipping cream
2 cups of cooked rice

Directions 
1. Heat a large skillet to medium high, add the olive oil and the chicken and cook till there is no more pink about 5-8 minutes.
2. Take chicken out of pan temporary and add the white wine to deglaze the pan and turn heat down slightly to medium.
3. Add garlic and stir and cook for about 1 minute.
4. Add onions and  peppers, ginger and cook for another 3 minutes. 
5. Add cream, salt, pepper, curry, and stir.
6. Now add the chicken back in and the coconut milk.
7. Turn heat down to low and add the spinach in batches, till it wilts and shrinks.
8. Simmer on low for about 10 minutes, stirring occasionally. Then serve over rice.
