Couscous Mediterranean Salad
Great healthy dish if you have some couscous laying around.
Ingredients
10 ounces cooked couscous
1 medium sliced cucumber
8-12 cherries tomatoes
1 red bell pepper, diced
8 ounce bag of fresh spinach
1 small red onion, diced
4 ounces of feta cheese, crumbled
1/2 cup black olives, sliced
Dressing
1/4 cup olive oil
1 large lemon juiced
1/4 teaspoon pepper
1 tablespoon garlic, minced
1. Cook couscous, follower the directions on the box. Once cooked, remove from heat and let cool for 20 minutes.
2. Cook fresh spinach in pan with 2 tablespoons of water and cover for about 3 minutes till spinach is condensed down and wilty, then remove from heat at and set aside.
3. In a large bowl, combine all your ingredients, except for dressing and mix well.
4. In a small bowl, mix the dressing.
5. Plate and top with dressing and server.
