Egg Rolls & Sweet and Sour Sauce
I have always liked egg rolls, but it does take some time to roll them out. This recipe is for 20 egg rolls. Some brands of egg wrappers are thin and rip easy and I found Twin Dragon to be the best and I have never had one break or rip on me.
Egg Rolls
Ingredients
1 package of 20 egg roll wrappers
1 pound of ground pork
1 tablespoon minced garlic
1 tablespoon ginger
2 tablespoons soy sauce
2 tablespoons sesame seed oil
1/2 teaspoon pepper
1/4 cup sliced green onions
6 cups of fresh cabbage, grated
2 medium carrots, grated
1 beaten egg
2 cups of cooked white rice for a side (optional)
oil for frying
Instructions
1. Heat a large skillet to medium high, add sesame seed oil and cook pork.
2. When pork is full cooked through. add the garlic and cook for 2 minutes
3. A the carrots and cabbage, cook and stir for another 3 minutes.
4. Add the soy sauce, ginger, and pepper, cook for another 2 minutes.
5. Remove for heat and stir in the green onions and set aside to cool.
6. Beat the egg in a small bowl.
7. Take one egg wrapper and put 3 tablespoons of the filling amd wrap tight, folding in the sides. When you get half way, coat the sides with egg to seal it. Repeat for all wrappers.
8. Heat a fryer or a pan of 2-3 inches of oil to 350 degrees.
9. Fry 4 egg rolls at a time, constantly turning to brown all sides, which is about 3-5 minutes and remove and cool for 2 minutes.
10. Serve with rice and sweet and sour sauce.

Sweet and Sour Sauce
Ingredients
1 cup pineapple juice
3/4 cup packed brown sugar
1/3 cup rice vinegar
3 tablespoons ketchup
2 tablespoons soy sauce
1 1/2 tablespoons corn starch
3 drops of natural red food coloring (optional)
1. In a small bowl, mix corn starch and water and stir well and set aside.
2. Heat a sauce pan to medium high and put the corn starch water mixture and all the ingredients in and mix well.
3. Stir occasionally till it bubbles and thickens, then turn off heat and serve.
