Frita Cubana
Frita Cubana
This is a very tasty hamburger that is very popular in Miami. It consists of ground beef, and chorizo on a hawaiian bun and topped with shoe string fries. To make this easy, I divided this up into 5 separate recipes.
Hawaiian buns
Ingredients
1/2 cup warm milk (around 110 degrees)
1/2 cup pineapple juice (around 110 degrees)
4 1/2 cups flour
2 large eggs
4 tablespoons butter
6 tablespoons sugar
1 1/2 teaspoons salt
2 1/4 teaspoons yeast
1 teaspoon olive
For baking
1 large egg
2 tablespoons water
Directions
1. Combine all dry ingredients into your mixing bowl.
2. Put milk and pineapple juice and heat in micro wave for about 30 seconds on high, then let cool down to 110 degrees, then add your yeast and stir for about 1 minutes. Let sit for about 5 minutes.
4. Add melted butter and eggs to the mixing bowl and stir using a stand mixer on low for about 1 minute.
5. Once the yeast mixture foams, add it the mixing bowl and mix on low till it forms a nice elastic ball, about 10 minutes.
6. In a large bow, add the olive oil and spread around the bowl.
7. Add the dough ball, cover and let rise for 2 hours in a warm area till it doubles in size.
8. Preheat oven to 375 degrees.
9 Line the bottom of a 13x9 baking sheet with parchment paper.
10. Gently deflate the dough on a lightly floured surface and divide into 10 portions,
11. Make small dough balls and place on baking sheet, cover and let rise for another 1 hour.
12. Mix the egg and water into small bowl, and brush the top of each dough ball.
13. Bake for 20 minutes, or until golden brown.

Mojo Aioli sauce
Ingredients
1 1/2 cups mayonnaise
1/2 cup sour cream
4 tablespoons Dijon mustard
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon onion powder
1/2 teaspoon garlic powder
Directions
1. Combine all ingredients in a bowl and mix well and refrigerate till burgers are done. This will be the topping for the burgers.

Chorizo Sausage
Ingredients
1 pound pork sausage
1 tablespoon chili powder
1 1/2 teaspoons garlic
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons sweet paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon ground coriander
1/4 teaspoon dried oregano
1/4 teaspoon dried thyme
1/4 teaspoon cinnamon
1/4 teaspoon white pepper
1/4 teaspoon black pepper
1/4 teaspoon chile powder
1/8 teaspoon ground clove
1/8 teaspoon cayenne pepper
1/8 teaspoon sage
2 tablespoons apple cider vinegar
Directions
1. Combine all ingredients in a large bowl and mix well, then set aside.

Burgers
Ingredients
2 pounds 80/20 ground beef
1 pound chorizo
2 teaspoons paprika
2 teaspoons cumin
2 teaspoon onion powder
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon ground pepper
2 medium onions, chopped
10 slices of swiss cheese
2 tablespoons canola oil
Directions
1. Combine the ground beef and all the ingredients, except for onions, cheese and oil with the Chorizo and mix well.
2. Heat a large skillet to medium high and add the canola oil.
3. Divide meat into 10 balls and lightly press into patties and fry.
4. Press onions into all the patties with a spatula.
5. Cook for about 15 minutes, and add swish cheese, reduce heat to simmer and cover till cheese is melted.
6. Put 1 tablespoon of Mojo Aioli sauce on each bun, then place burger and shoestring fries and serve..

Shoestrings Fries
Ingredients
4 large russet potatoes, peeled and washed
1 quart peanut oil
salt for seasoning
Directions
1. Heat a fryer, or large deep skillet and pour oil in and heat to 375 degrees.
2. Use a box grater with the largest holes and grate the potatoes, then soak in water for 5 minutes to remove starch.
3. Drain grated potatoes with colander and dry with paper towels.
4. Fry potatoes till they are golden brown ,which is about 3 minutes, then top on the burgers
