Stuffed Mac & Cheese Stuffed Meat Log








This was a experiment recipe that turned out pretty good! I split this up into 3 different recipes to make it easier to follow. Make the mac and cheese first.

Mac and Cheese
Ingredients
4 tablespoons butter
4 tablespoons flour 
1/2 teaspoon mustard powder
1/2 teaspoon paprika 
1/4 teaspoon pepper
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
1 teaspoon salt
8 ounces of cooked macaroni
2 1/2 cups whole milk
8 ounces cheddar shredded cheese
5 ounces of mozzarella shredded cheese  

Directions
1. Cook the macaroni and follow the box instructions and pull off 2 minutes before the finished time, then drain and rinse with cold water, then add the olive oil so it does not stick and set aside.
2. Heat a small pot to medium heat and melt the butter.
3. Add all the dry ingredients and mix well and cook for about 1 minute.
4. Add milk and constantly stir till it bubbles, then add the cheese and stir.
5. Once cheese is melted, add the macaroni and stir.
6. Pull off heat and let cool for 10 minutes.
7. Line a loaf pan with plastic or parchment paper amd refrigerate for 4 hours.

Tomato Sauce
Ingredients
6 ounce can tomato paste
15 ounce can of tomato sauce
2 tablespoons olive oil.
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon garlic
1 teaspoon oregano
1 teaspoon sugar 
8 ounces mozzarella cheese (for topping meat log later)
2 ounces of parmesan cheese (optional for topping)

Directions
1. In a saucepan, put all ingredients expect for cheese and heat to medium.
2. When it bubbles turn to low, stir occasionally and simmer for 10 minutes, then pull off heat and set aside.

Meatlog
Ingredients 
2 1/4 pounds ground pork
2 1/4 pounds lean hamburger
2 cup bread crumbs
1 sweet onion finely chopped 
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1 tablespoon parsley 
1 cup water

Directions 
1. Preheat oven to 350.
2. Put all in ingredients in a large bowl, and mix well with your hands until everything is combined well.
3. On a large baking sheet, line the bottom with parchment paper.
4. Take some of the meat mixture and line the bottom of the pan in the middle for a base for the mac and cheese, then dump your mac and cheese form on top of the meat mixture.
6. Take pieces of the meat mixture and slowing and gently start covering all the mac and cheese to about 1/2 inch thick. This will take time and patience.
7. Put in the oven and bake for 30-40 minutes.
8. Pull out of oven and spread the sauce all the way around the log, then top with the mozzarella cheese.
9. Put back in the oven on broil for 3-5 minutes till cheese is melted and slightly golden.
10. Pull out of oven, let rest for 5 minutes, top with parmesan cheese and slice and serve.
