Crispy French Fries





Been experimenting for a long time on how to get nice crispy french and finally found the prefect solution! This is not easy and does take some time, but it is well worth it!

Ingredients
6-8 large russet potatoes
1/4 cup sugar
1/4 cup salt

Instructions
1. Peel and cut potatoes with a french fry cutter or knife into 1/4 long strips.
2. In food safe buck, fill 3/4 with water and put some ice in it to keep it cool and then put all your cut potatoes in it.
3. Add the sugar and salt into the potato bucket, stir and let soak for 3 hours.
4. Dump water out and spread all cut potatoes all out on a baking drying rack for 2 hours.
5. Heat oil in a fryer or in a pan to 370-375 degrees.
6. Cook fries in batches.
7. Start a batch and cook for 2 minutes, then pull up for 5 minutes. This will allow your oil to get up to temp again. Then back down till they are golden brown, which is around 5 more minutes.
8. Take fried out and put on a plate with paper towels and serve hot.
