Moroccan Chicken Tagine with Couscous




Chicken Tagine is a traditional Moroccan dish of chicken with spices and lemons. 

Ingredients 
8 bone-in skin-on chicken thighs
2 cups chicken broth
1 lemon entirely zested 
1 teaspoon paprika
1 teaspoon cumin
1/4 teaspoon cayenne pepper
1/2 teaspoon ginger
1/2 teaspoon coriander
1/4 teaspoon cinnamon
1/4 teaspoon salt
2 tablespoons flour
5  gloves minced garlic
1 tablespoons olive oil
2 tablespoons white wine
2 tablespoons honey
3 medium carrots cut in 1/2 inch coins
1 large sweet onion cut in half 1/4 inch slices
1/2 cup of pitted green olives cut in half
2 tablespoons of chopped fresh cilantro 
1 cup of cooked Couscous (optional)

1. Mix the flour and all the dry spices in a bowl and set aside.
2. Heat a large pan to medium high heat, add the olive oil, the pieces of chicken, then brown both sides, remove of pan and temporarily put on a plate.
3. Pour off all liquid out of pan except for 2 tablespoons, reduce heat to medium and pour the white wine into the pan to deglaze it.
4. Add the onions, garlic and cook for about 5 minutes occasionally stirring. 
5. Add 1 cup of the chicken broth and stir in all the dry spices and cook for about 2 minutes .
6. Add the carrots, lemon zest, honey, and give it a cook stir and cook for another 5 minutes.
7. Squeeze all the juice out of the lemon into the pan and stir.
8. Add in the rest of the chicken broth, all the chicken, reduce heat to low and simmer for 20 minutes.
9. Add the cilantro over the top and serve with the Couscous.
