Gyro's and Cucumber Sauce

Gyro's and cucumber sauce 




This is one of my favorite meals! The 2 things are not easy to find by me where I live, is pita bread and ground lamb, the pita bread I sometimes made, but not in this case and these did not have pockets in them. 
The key to a prefect load, is to bake in a water bath with a kitchen towel on the bottom, which will evenly cook. I always use a meat thermometer, just makes it way easier, since I don't have to  check constantly to see when it is done and they sell for about $12-$20, which I highly recommend. This is a fairy easy recipe that anyone can make.

Ingredients - Loaf
1 pound ground lamb
1 pound extra lean ground beef
1/2 chopped onion
1 tablespoon minced garlic
1 teaspoon dried oregano
1 teaspoon cumin
1 teaspoon marjoram 
1 teaspoon rosemary
1 teaspoon thyme
1 teaspoon pepper
1/4 teaspoon salt
2 whole sliced tomatoes for topping (optional)
1/4 cup feta cheese for topping (optional)

Ingredients - Cucumber Sauce
1 large cucumber (seeded and peeled)
1 teaspoon garlic powder
1 teaspoon dill
1 teaspoon lemon juice
1 tablespoon mayonnaise 
1/4 cup + 2 tablespoons plain yogurt 
1/2 tablespoon lemon juice 
1/2 teaspoon garlic
pinch of salt
pinch of pepper

Directions
1. Put all the ingredients for the cucumber sauce into a bowl or food processor and mix well till it is creamy and put aside. 
2. Preheat oven on bake to 325 degrees.
4. In a large bowl, put all the loaf ingredients and hand mix well until everything is well blended.
3. In a 7x4 inch loaf pan, press the meat loaf mixture all around till there is no air pockets.
4. Take a 13x9 inch baking dish or whatever large baking dish you have and put a damp small kitchen towel, or 5 paper towels stacked on each other on the bottom of the baking dish and put the 7x4 loaf pan on top of the damp towel.
5. Pour boiling water into the 13x9 baking dish till it comes half way of the loaf pan.
6. Bake to a internal temperature of 165 degrees or for 45 to 1 hour till there is it no longer pink in the middle.
7. Take out of oven and pour the grease off that has accumulated in the loaf pan and let rest for 10 minutes.
8. Cut into thin slices, serve with pita bread and topped with cucumber sauce, tomatoes and feta cheese.
