Tomato Mirepoix Soup
Been dealing with a bad cold and this was the perfect dinner and is very healthy! This was made with a basic mirepoix of carrots, onions and celery. I also transferred it to a crock pot and put it on low, so I could go back for more later. This is served with grilled cheese sandwiches
Ingredients
4 cans of tomato sauce (15 ounce cans)
3 carrots, batonnet chopped
1 large onion, chopped
3 stalks celery, sliced
1/2 cup unsalted butter
3 cups chicken broth
1 cup heavy cream
1 tablespoon fresh garlic
1 tablespoon honey
1 tablespoon paprika
1 teaspoon oregano
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon salt
1/4 teaspoon white pepper
2 bay leaves
Directions,
1. heat large skillet to medium high and add the 1/4 butter, carrots, onions and celery and cook till onions are translucent, about 10 minutes, stirring occasionally.
2. Add garlic, stir and cook for another 5 minutes, then set aside.
3. Heat a large pot to medium and add tomato sauce, cream, broth, honey, paprika,oregano, thyme, rosemary, salt, white pepper and bay leaves and stir.
4. Turn heat to low and add in the mirepoix and stir.
5. Simmer for 10 minutes and serve.
