Buffalo Chicken Mac and Cheese
This is a great dish if you like buffalo chicken and mac and cheese. Shredding the chicken soaks up a lot more flavor, which will be explained in the recipe.
Ingredients
2 large chicken breasts
2 1/2 cups chicken broth
4 cups of whole milk
16 ounces of macaroni pasta
2 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1 tablespoon ranch powder
1/2 teaspoon smoked paprika
3 cups shredded cheddar cheese
1 cup shredded monterey jack cheese
2 ounces cream cheese
3/4 cup buffalo wing sauce
1/4 cup diced celery ( for topping)
2 tablespoons green onions (for topping)
Directions
1. Boil the chicken breasts in water for 20 minutes.
2. In a large bowl, shred chicken with a powered hand mixer till it is well shredded, then add the buffalo sauce, stir and set aside.
3. In a large pot, melt butter, then add the flour and cook and stir for about 1 minute.
4. Add chicken broth, milk, ranch powder, paprika, salt and heat to medium high. Stir often and when it bubbles, add the macaroni and cook for 10 minutes.
5. Pull off heat, add in chicken and stir.
6. Add in cheddar and monterey jack cheese and stir in.
7. Serve and top with green onions and celery.
