Spicy Cabbage

Spicy Cabbage Made this for the first time, which turned out really good! Ingredients 1 tablespoon groundnut oil or any other oil you prefer 3/4 teaspoon cumin seeds 3 cloves garlic finely minced 2 dried red chilies broken into halves 4 ounce can of dried green chilies 1 medium onion thinly sliced 4 cups shredded cabbage 1/2 teaspoon turmeric powder 2 teaspoons coriander powder 1/2 teaspoon cumin powder 1/2 teaspoon red chili powder 1/4 teaspoon black pepper powder 1/2 teaspoon salt 1/2 teaspoon garam masala powder 2-3 tablespoons chopped green onion Directions 1. Heat oil in a saute pan. Throw in cumin seeds. As soon as they crackle, add the garlic, chilies and onion.  2. Cook for 5-6 minutes on a medium heat. 3. Mix in the shredded cabbage and all the spices. Toss well to combine.  4. Lower the flame, cover and steam cook for 6-7 minutes until the cabbage is cooked through. 5. Cashew Chicken and Rice This is a great tasting dish and I always tend to go heavy on the vegetable side and less on the meat side. I broke this down so it is easy to follow. Ingredients 2 large chicken breasts, cut up in 1 inch chunks  1 medium sweet onion (sliced) 1 whole bell pepper (sliced) 3/4 cup celery (thinly sliced) 1 tablespoon of fresh garlic  1 1/2 cups roasted unsalted cashews 3 tablespoons sesame oil  1/2 cup drained canned water chestnuts  1 cup mushrooms (sliced) 3 cups cooked rice  3 green onions (thinly sliced) for topping Sauce  1/2 cup chicken broth 1/2 cup soy sauce  2 tablespoons oyster sauce  2 tablespoons corn starch 1/2 teaspoon sesame oil 1/4 teaspoon salt 1 tablespoon packed brown sugar 1 tablespoon rice vinegar  2 tablespoons hoisin sauce 1 tablespoon ginger  Directions  1. Pullman Bread

Pullman Bread This is very easy bread to make since it is done in a large covered Pullman bread pan. Ingredients  1 1/2 cups water (about 110 degrees) 2 1/4 teaspoons yeast  2 tablespoons sugar 4 cups of flour 1 teaspoon salt  2 tablespoons dry whole milk 2 tablespoons of melted butter Directions  1. Put flour, melted butter, dry milk, salt and 1 tablespoon of sugar in a mixing bowl and mix on low for 1 minute. 2. Using a measuring cup, pour water in with 1 tablespoon of sugar, add yeast and gently stir with fork till dissolved and let sit for 10 minutes. 3. Pour water yeast mix into the flour and mix till you get a elastic smooth ball. 4. Place dough ball in a covered bowl in a warm place and let rise to 2 hours. 5. Grape Ice Cream Took me a few attempts at combination of different ingredients to get this down, but I finally nailed it! Simmer for long time is the key to get as much water out of the grape concentrate as possible, which will prevent ice crystals. I did add food colouring to this for presentation, so it would look more purple then pink. This will make 3 pints. Ingredients  3/4 cup sugar 2 teaspoons corn starch 2 1/4 cups whole milk 2 eggs 1/2 cup half and half 1 cup cream 1 can frozen concentrated grape juice (11.5 ounce) 1/8 teaspoon salt 1/2 teaspoon of liquid purple food colouring (optional) Directions  1. Put all ingredients in a deep sauce pan and stir till all ingredients are mixed. 2. Heat pan to medium high heat and constantly stir for 10 minutes. 3. Ingredients  1 1/2 cups finely chopped 2 sticks (8 ounces) unsalted butter, melted 2 1/3 cups all-purpose flour  1 teaspoon salt 1 teaspoon ground cinnamon 1 teaspoon baking soda 1 cup dark brown sugar, packed 1/2 cup granulated sugar 2 teaspoons vanilla extract 2 tablespoons bourbon 2 large eggs, at room temperature 12 ounces semi-sweet chopped into chunks  24 pecan for decoration, optional Directions 1. Swedish Meatballs & Noodles Swedish meatballs is something I had at every church potluck and you usually saw 3 different ones. This is a Minnesota favorite and a easy recipe!  Ingredients  Meatballs 1 pound very lean ground beef 1/4 cup bread crumbs 1 tablespoon parsley  1/4 teaspoon nutmeg 1/4 teaspoon allspice  1/4 cup minced onion 1 large egg 1/2 teaspoon garlic powder 1/2 teaspoon salt 1/4 teaspoon pepper 1 tablespoon olive oil 1 package of noodles ( 1 pound) Sauce 2 cups beef broth 1 cup heavy cream 3 tablespoons flour 5 tablespoons butter 1 tablespoon Worcestershire sauce  1 tablespoon Dijon mustard  Directions  1. Hamburger Buns Easy buns for hamburgers or sandwiches! One thing I always have done, is dissolve the yeast and water separately in the measuring glass I pour the water into.    Ingredients 3 1/2 cups bread flour 1 egg 1/4 cup sugar 2 teaspoons salt 2 tablespoons button 1 tablespoon yeast 1 cup lukewarm water (around 109 degrees) 1 addition egg for coating 1 tablespoon sesame seeds 1. In large measuring glass, add water, yeast and a teaspoon of sugar out of the quarter cup of sugar, and let sit till foam forms, which is about 6 minutes. 2. Put all ingredients, except for sesame seeds and mix for 1 minute. 3. Add yeast water mixture and mix till dough forms a nice elastic ball. 4. Remove from mixer and put in bowl, cover, put in warm place and let us rise to 2 hours. 5. Dump bowl out on a lightly floured surface and cut into 10 equal parts. 6. Pizza Sauce  Took me a while to perfect this recipe! But it is very easy! Ingredients  2 cans of tomato sauce (15 ounce) 1 can tomato paste (6 ounce) 1 tablespoon dried basil 1 tablespoon fennel  1 tablespoon sugar 2 tablespoons of olive oil 1 teaspoon garlic powder  1 bay leaf 1 teaspoon salt  1/4 teaspoon pepper  Directions  1. Pour all ingredients into a small pot and stir. 2. Heat to low and cook for 20 minutes with a cover. 3. Uncover and stir occasionally. 4. Awesome Salsa

Awesome Salsa Who does not like salsa! This salsa can be used on anything from chips, to tacos to eggs. I don’t like any sweet in my salsa, so this recipe has no sugar. Ingredients  4 ripe tomatoes  3 gloves peeled garlic  1 red onion 3 jalapeños (stemmed and seeded) 1/3 cup fresh cilantro  1 tablespoon cumin  3 tablespoons fresh lime juice  1 1/2 teaspoons salt 1 teaspoon cayenne pepper  10 ounce can of diced tomatoes and green chili’s  Directions 1. Core and seed tomatoes and cut into quarters. 2. Cut top and bottom off onion, peel and cut into quarters. 3. Classic Waffles  Classic waffles are thinner non-Belgium waffles. It seems almost impossible to find a classic waffle maker new. Thrift stores seem like the only place they are available. This is a simple waffle recipe. Ingredients  2 cups flour  2 eggs 1 3/4 cups milk 4 teaspoons baking powder  1/2 cup vegetable oil 1 tablespoon super 1/2 teaspoon of vanilla extract  1/4 teaspoon salt Directions 1. Heat waffle iron up. 2. Combine all ingredients into a large bowl and mix well and let sit for 5 minutes. 3. Pull small amount in your waffle iron and cook. Pineapple Chicken This is very tasty recipe. The hardest part is scooping out the pineapple. Ingredients 4 chicken breasts 1 whole pineapples 1/3 cup soy sauce  1/3 chicken broth  1/3 hoisin sauce 1/2 cup brown sugar 1 tablespoon corn starch 1 tablespoon minced garlic  1 tablespoon olive oil 1/2 cup cashews  1 1/2 cups of cooked rice Directions 1. Heat a large skillet to medium and add olive oil. 2. Cut chickens into 1 inch pieces and add to skillet and brown. 3. Cut pineapple directly in half and cut small pieces out with a spoon. Use a sharp paring knife to cut the middle out and discard. 4. Turn heat down to simmer and add pineapple and garlic. 5. In a bowl, add soy sauce, chicken broth, hoisin sauce, then add add in corn starch and stir. 6. Add in brown sugar to the sauce and stir.   7. Ingredients Graham Cracker Crust 2 cups of crushed graham crackers 9 tablespoons of melted butter 2 tablespoons of sugar 2 tablespoons of brown sugar Cheesecake 32 ounces of cream cheese (4 8oz packages) 2/3 cups sour cream 5 eggs 1 cup sugar 1/4 teaspoon salt 2 teaspoons of vanilla extract Directions 1. Preheat oven to 325F  2. Line the bottom of a 9 inch springform pan with parchment paper to prevent sticking. 3. Add crushed graham crackers to a bowl combining, sugar, and brown sugar, and melted butter and stir well and mix with a fork. 4. Pour crumb mixture into the springform pan and press firmly on the bottom going up the edge and set aside. 5. In the large bowl or a stand mixer add cream cheese and mix until smooth. 5. Ground Turkey and Cranberries  A couple months ago I was at Costco and bought a huge pack of ground turkey in 1 pound bags that has been sitting in my freezer that I needed to start using it, so I came up with this delicious easy recipe! Ingredients 1 pound ground turkey 3/4 cup diced mushrooms 1 small diced onion 4 tablespoons of butter 2 boxes of stuffing mix (6 ounce) 4 stick of celery thinly sliced. 1/2 cup of dried cranberries Directions 1. In a large pan, heat to medium high heat and brown the turkey. 2. Add butter, mushrooms, onion and celery and stir and cook for 10 minutes 3. Cook the 2 boxes of stuffing and follow the directions on the back. I prefer to use broth instead of water. 4. Lasagna  The reason I called this 8x8 lasagna, becuase all the recipes I have seen are all large baking dishes, which is way too much for 2 people, so I came up with this recipe that uses a 8 x 8 baking dish. Soaking the noodles, rather than boiling them is easier and the noodles stay together better. Ingredients   1 pound lasagna noodles 1/2 pound of ground beef 1/2 pound of mild Italian sausage  2 gloves of minced garlic or 1 teaspoon of garlic powder  1 small diced onion 1 tablespoon of Italian seasoning 2 tablespoon of brown sugar 3 tablespoons of olives, finely chopped 2 cans of crushed tomato (15 ounce) 1 can of tomato paste (6 ounce) 1 teaspoon fennel 1 teaspoon salt 1/4 teaspoon pepper 1 cup beef broth 16 ounces of shredded mozzarella cheese (Two 8 ounce blocks) 1 cup of parmesan cheese 1 egg 15 ounces of whole milk ricotta cheese Top with cottage cheese and fresh parsley (optional)  Directions ...

Ricotta Spinach Quiche Me and wife really enjoyed this dish! You can use whatever you want for the pastry crust and I used puff pastry. Ingredients 4 tablespoon butter 1/3 cup finely chopped red onion 1 bell pepper 2 cloves garlic  1 (8 ounce) package fresh spinach 1/2 (14 ounce) package pastry for 9-inch double-crust pie 5 large eggs 5 strips of cooked cut bacon or ham 3/4 cup heavy cream 1/3 cup mozzarella cheese 1 basil 1/2 teaspoon salt 1/4 teaspoon ground black pepper  Directions 1. Add the butter and heat a large skillet to medium heat. 2. Cut up the bell pepper, onions, garlic and add to the skillet and cook and stir for 5 minutes. 3. Ingredients 1 1/2 cups rice 1/2 teaspoon salt 1/2 cup chicken broth 1/2 cup soy sauce 2 tablespoons rice wine vinegar 3 tablespoons brown sugar 3 cloves minced garlic 1 small onion, finely chopped 1 teaspoon sesame seeds 1 tablespoon olive oil 1 tablespoon sesame oil 1 tablespoon cornstarch 1 tablespoon fresh ginger, grated 1 tablespoon sriracha 1 pound sirloin tip 1 head broccoli. blanched  1 red pepper, blanched and thinly sliced Directions 1. Ricotta Stuffed Rigatoni Pie Very challenging fun dish to make! Makes for a great picture too! Ingredients 1 pound of rigatoni 1/2 pound hamburger 2 tablespoons of tomato paste 2 cans of tomato sauce (14 ounce) 1 onion finely chopped 2 gloves of minced garlic 1 teaspoon salt 1 teaspoon oregano 1 teaspoon basil 1/2 teaspoon pepper 1/4 teaspoon crushed red pepper 3 tablespoon olive oil divided  1 cup parmesan cheese divided 2 1/2 cups ricotta cheese 8 ounces of shredded mozzarella 2 large beaten eggs Directions 1. Cook hamburger in a large 12 inch skillet and beak up into smaller pieces until browned, Add the onions and garlic and cook for about 2 minutes stirring. Add the tomato paste, tomato sauce, oregano, red pepper flakes, basil, salt, pepper and 2 tablespoons of olive oil. Reduce heat and simmer for 30 minutes. 2. Mac and Cheese Burgers This was a fun project! It takes some time and patients, but well worth it and you will really impress your guests! Ingredients 16 ounces of prepared mac and cheese 2 cups flour 1 teaspoon salt 1/2 teaspoon black pepper 1 tablespoon of milk 2 large beaten eggs 2 cups bread crumbs 2 cups of oil for frying, preferably a deep fryer 2 pounds ground beef Directions 1 Prepare mac and cheese, then spread out on a large baking sheet, cover with plastic wrap and freeze for 2-4 hours. 2. Set up 3 bowls, one with flour, salt and pepper, another one for the eggs and one for the bread crumbs. 3. Heat fryer up to 350 degrees. 4. Using a 3 1/2 to 4 inch biscuit cutter or whatever you can find. Cut into the frozen mac and cheese and make several circles. 5. Take the mac and cheese circles you just cut, one and at a time and coat in flour bowl, then egg mixture and last in the bread crumbs bowl. 6. Cook in deep fryer for about 2 ...
