Ricotta Spinach Quiche

Ricotta Spinach Quiche





Me and wife really enjoyed this dish! You can use whatever you want for the pastry crust and I used puff pastry.

Ingredients
4 tablespoon butter
1/3 cup finely chopped red onion
1 bell pepper
2 cloves garlic 
1 (8 ounce) package fresh spinach
1/2 (14 ounce) package pastry for 9-inch double-crust pie
5 large eggs
5 strips of cooked cut bacon or ham
3/4 cup heavy cream
1/3 cup mozzarella cheese
1 basil
1/2 teaspoon salt
1/4 teaspoon ground black pepper 

Directions
1. Add the butter and heat a large skillet to medium heat.

2. Cut up the bell pepper, onions, garlic and add to the skillet and cook and stir for 5 minutes.

3. Add the spinach in 3 batches to the skillet and cook till the spinach is wilted then and put aside.

4. Cook your bacon or ham in another pan and put aside.

5. In a bowl, add your eggs, cream, basil, salt, pepper, and cheese and stir till smooth and set aside.

6. Preheat your oven to 375 degrees

7. In a 9.5 glass pie pan, form the the pastry crust in the pan.

8. Put the pan of veggies into the pie pan and then the bacon.

9. Pour you egg mixture over the top.

10 Bake for 35-40 minutes till it is light brown.

11. Take out of oven and cool for 5 minutes and serve.
