Grape Ice Cream
Took me a few attempts at combination of different ingredients to get this down, but I finally nailed it! Simmer for long time is the key to get as much water out of the grape concentrate as possible, which will prevent ice crystals. I did add food colouring to this for presentation, so it would look more purple then pink. This will make 3 pints.
Ingredients
3/4 cup sugar
2 teaspoons corn starch
2 1/4 cups whole milk
2 eggs
1/2 cup half and half
1 cup cream
1 can frozen concentrated grape juice (11.5 ounce)
1/8 teaspoon salt
1/2 teaspoon of liquid purple food colouring (optional)
1/2 teaspoon of liquid purple food colouring (optional)
Directions
1. Put all ingredients in a deep sauce pan and stir till all ingredients are mixed.
2. Heat pan to medium high heat and constantly stir for 10 minutes.
3. Turn heat to simmer and constantly stir for another 20.
4. Remove from stove and put the pan in ice water in the sink to cool it down.
5. Cool it down for another 60 minutes and then cover and place in frig over night.
6. Pull out of frig and pour into your ice cream making and turn for at least 60 minutes until smooth and creamy and serve.
