Chicken Fried Steak  Chicken fried stead is one of my favorites! Cube steak is just tenderized sirloin tip or top round. Ingredients 4 cube steaks 1 cup flour 3 eggs beaten 1 teaspoon garlic 1 teaspoon pepper 1 teaspoon onion powder 2 teaspoon salt 1 cup buttermilk 8 tablespoons butter Mashed Potatoes (optional side dish) Gravy 2 teaspoons garlic   1 cup heavy cream 1 cup water 1/2 cup flour 1/4 cup bacon grease 1/2 teaspoon salt 1/2 teaspoon pepper Instructions  1. Prepare 3 bowls, one for the flour, garlic, pepper, onion powder and salt. Another one for the eggs and one more for the buttermilk. 2. Place all the cubes steaks in the buttermilk and let it sit for 10 minutes. 3. While the cube steaks are soaking, heat a large skillet to medium high with the 8 tablespoons of butter. 4. Firecracker Chicken A nice spicy dish with a little sweet! Ingredients  2 large chicken breasts cut into 1 inch pieces 1/2 cup corn starch 1/2 cup oil for frying 1/2 teaspoon salt 1/2 teaspoon pepper 3 eggs beaten  1 cup buffalo sauce 1/2 cup of brown sugar 2 tablespoon rice vinegar  1/2 teaspoon pepper flakes 1/4 cup sliced green onions 1 1/2 cups of cooked white rice (Optional) Directions 1. Preheat oven to 350 degrees 2. Place chicken on a plate and season with salt and pepper. 3. Heat skillet with oil to 325 degrees 4. Prepare 2 bowls, one bowl for the corn starch and another bowler for the eggs. 5. Dip chicken in cornstarch, then eggs and fry for 3-4 minutes a side in batches. 6. Minnesota Swedish Meatballs This is the traditional swedish meatball with oats and lamb. I had this with mushrooms, egg noodles and a simple sauce as in the picture. If you don't have lamb, you can substitute for another pound of beef or ground pork. Ingredients 1 pound ground lamb 1 pound extra lean ground hamburger 1 1/2 cups half and half 2 cups oats 2 eggs beaten  6 tablespoons butter 1 small onion, minced 1 teaspoon nutmeg 1 teaspoon salt 1/2 teaspoon pepper Cooked egg noodles (optional)  Whole mushrooms (optional) Sauce  2 cups cream 3 tablespoons flour 1 teaspoon salt 1/2 teaspoon pepper 3 tablespoons workshire sauce   Instructions   1. Reuben Egg Rolls

Reuben Egg Rolls  This was a experiment that turned out really good! The trick is double wrapping the egg rolls, which I learned from a restaurant. I had several jars of homemade sauerkraut also for this recipe, but any brand is fine. Can can be served with cooked butternut squash as a side dish pictured.  Ingredients 1 jar of sauerkraut (16 ounce)  Corned beef brisket, 4-5 pounds depending on the packet 2 packages of egg rolls (need 2 since you are double wrapping them) Swiss cheese (8 ounces shredded) 4 cups of beef broth 1 large egg Thousand Island Dressing 1 cup mayonnaise  1/4 cup ketchup  1/4 cup sweet relish  1/4 cup finely minced onion 4 teaspoons vinegar  2 teaspoons finely minced garlic 1/4 teaspoon salt 4 dashes of tabasco sauce (optional)  Directions  1. Buffalo Chicken Chili  This is great recipe is you like spicy chili! This was done in a crock pot for 6 hours. This is pretty easy to make also! Ingredients 2 large chicken breasts 1 tablespoons olive oil 1/2 cup diced celery  1 bell diced bell pepper 1 medium diced onion 1 tablespoon of minced garlic  1 tablespoon smoked paprika  1 tablespoon chili powder 1 teaspoon salt 1 teaspoon lemon juice  1/2 teaspoon black pepper 4 cups chicken broth 1 cup buffalo sauce  1/2 cup dark beer  1 can of diced tomatoes, 14 ounce 1 can tomato paste, 6 ounce  2 cans pinto beans, 14 ounce  1 can cannellini beans, 14 ounce  Topping Sharp grated cheddar cheese Blue cheese, cumbled  Green onions, sliced Chives, sliced Sour cream  Instructions  1. Creamy Cauliflower Salad This is a excellent tasting dish very little sugar. Ingredients 1 whole cauliflower, chopped 10 ounces of frozen peas, thawed 1 small onion, diced 1 cup sharp white or orange cheddar cheese 1 package of cooked bacon, chopped 1 cup mayonnaise 2 tablespoons sugar 3 tablespoon apple cider vinegar    1/2 teaspoon salt 1/4 teaspoon pepper Directions  1. In a large bow, mix the vinegar and sugar for about 2 minutes.  2. Add the mayonnaise, salt and pepper and mix. 3. Add the cauliflower. 4. Add cheese, peas and bacon and mix. 5. Awesome Spicy Fried Chicken This is some awesome tasting fried chicken and the key is marinated in pickle juice for several hours. Ingredients 4 large chicken breasts 3 cups of pickle juice  2 cups all purpose flour 1/3 cup powdered sugar 1 teaspoon paprika  2 teaspoons pepper 1 teaspoon salt 1 teaspoon baking powder 4 teaspoons cayenne  1 teaspoon chili powder 2 large eggs 1 cup milk 1 cup water Instructions  1. Cut chicken breasts in half lengthwise and then cut those pieces in half the other way, so you end of up 4 inches by 3/4 inch pieces. You want to cut them thin, but not too thin so they cook evenly. 2. In large bowl, put the cut pieces of chicken and pickle juice together and marinate over night or for 10 hours in the frig with a plastic wrap. 3. Heat oil or fryer to 325 degrees. 4. In one bowl mix all the eggs, milk and water and mix well. 5. In another bowl, put all the dry ingredients in and mix well...

Potato Salad  This is a very easy dish to make with little ingredients.  Ingredients  4 pounds of red potatoes (peeled, boiled and cut into 1 -1 1/2 inch chunks)  1 cup sour cream 1 1/2 cups mayonnaise 5 hard boiled eggs (peeled and sliced) 1 small yellow onion (diced) 1 1/2 teaspoon salt 1 teaspoon pepper 3 celery sticks (chopped) 1/2 bell pepper (diced)  pinch paprika for topping (optional) Instructions  1. In a large bowl, put potatoes, onions, celery, eggs and peppers and lightly mix. 2 In another bowl, put sour cream, mayonnaise, salt, pepper and mix well.  3. Ground Beef Creamy Cheese Casserole  This is a  dish I totally made up, but it turned out really good! Ingredients  3/4 pound ground beef 1 can Rotel tomatoes (10 ounce) 1 can tomato paste (6 ounce) 2 cups beef broth 3 cups of uncooked egg noodles. 1 medium diced onion 1 tablespoon minced garlic  1/2 teaspoon dried basil. 1/2 teaspoon oregano 1/2 teaspoon italian seasoning  1/2 teaspoon salt 1/4 teaspoon pepper 1/4 cup sour cream 2 tablespoons cream cheese 1 cup mexican cheese 1 cup mozzarella cheese Instructions 1. Heat large skillet to medium high, brown beef till fully cooked with no more pink. 2. Turn down heat to medium, drain grease off, add in onions, garlic and cook and stir for 3 minutes. 3. Add tomates, tomato paste, beef broth, basil, oregano, italian seasoning, salt, pepper and turn to low and simmer for 20 minutes. 4. The chicken is shredded with a hand mixer, which soaks of more flavor.The bread howls are made first since they take the longest. Pumpkin Pie Great pumpkin pie and I find that a food processor works the best for making the pie crust. Ingredients  Crust 1 1/3 cup bleached all purpose flour 1/2 teaspoon salt  1 teaspoon apple cider vinegar 1/4 cup cold water 8 tablespoons butter (1 stick) 2 tablespoon Crisco  Filling 1 can of pumpkin (15 ounce) 3/4 cup sugar 1 teaspoon cinnamon 1/2 teaspoon salt 1/2 teaspoon ginger 1/2 teaspoon nutmeg 2 large eggs 1 can evaporated milk (12 ounce) whipped cream (optional) Instructions Crust 1. Put flour and salt in food processor and give it a 3 quick pulses to mix it up. 2. Take a box shredder on the largest holes and shred the butter directly over and into the food processor and pulse 4 times for 3 seconds at every 2 tablespoon of butter you shred. 3. Creamy Beef Pasta This is a great tasting dish with many favours! This uses ground beef, tomato sauce, cream and cheddar cheese. Conchiglie pasta soaks up a lot of sauce is what this recipe uses, but any pasta will work. Ingredients  2 tablespoons olive oil 2 pounds of extra lean ground beef 1 pound of conchiglie pasta 1 cup beef broth 2 cans of tomato sauce, 14 ounce 1/4 cup flour 1 cup heavy cream 1 tablespoon garlic, minced 1 small onion, diced 1 teaspoon dried basil 1 teaspoon dried oregano 2 teaspoon salt 1/2 teaspoon crushed red pepper 8 ounces of shredded cheddar cheese parsley (optional for garnish) Directions  1.
