Buffalo Chicken Chili
Buffalo Chicken Chili
This is great recipe is you like spicy chili! This was done in a crock pot for 6 hours. This is pretty easy to make also!
Ingredients
2 large chicken breasts
1 tablespoons olive oil
1/2 cup diced celery
1 bell diced bell pepper
1 medium diced onion
1 tablespoon of minced garlic
1 tablespoon smoked paprika
1 tablespoon chili powder
1 teaspoon salt
1 teaspoon lemon juice
1/2 teaspoon black pepper
4 cups chicken broth
1 cup buffalo sauce
1/2 cup dark beer
1 can of diced tomatoes, 14 ounce
1 can tomato paste, 6 ounce
2 cans pinto beans, 14 ounce
1 can cannellini beans, 14 ounce
Topping
Sharp grated cheddar cheese
Blue cheese, cumbled
Green onions, sliced
Chives, sliced
Sour cream
Instructions
1. Boil chicken breasts for about 20 minutes, drain and put in a large bowl to cool for 10 minutes.
2. Take a hand mixer on low and shred the chicken apart, then add the olive oil and shred a little more, then set aside.
3. In a crockpot on low, and add all your ingredients and mix, add shredded chicken in also.
4. cook on low for 6 hours, occasionally stirring, then serve and add toppings.
