Ground Beef Creamy Cheese Casserole
This is a dish I totally made up, but it turned out really good!
Ingredients
3/4 pound ground beef
1 can Rotel tomatoes (10 ounce)
1 can tomato paste (6 ounce)
2 cups beef broth
3 cups of uncooked egg noodles.
1 medium diced onion
1 tablespoon minced garlic
1/2 teaspoon dried basil.
1/2 teaspoon oregano
1/2 teaspoon italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup sour cream
2 tablespoons cream cheese
1 cup mexican cheese
1 cup mozzarella cheese
Instructions
1. Heat large skillet to medium high, brown beef till fully cooked with no more pink.
2. Turn down heat to medium, drain grease off, add in onions, garlic and cook and stir for 3 minutes.
3. Add tomates, tomato paste, beef broth, basil, oregano, italian seasoning, salt, pepper and turn to low and simmer for 20 minutes.
4. Cook noodles according to the package, then drain with strainer, add back in the pan with no heat, add sour cream and cream cheese and stir into the noodles until well combined.
5. Preheat oven to 350 degrees.
6. In a 8x8 baking dish, add the meat sauce, then layer the noodles and then add the mexican and mozzarella cheese to the top and lightly cover top with aluminum foil, not to touch the cheese.
7. Bake for 35 minutes and the last 10 minutes pull off the foil
8. Let rest for 6 minutes and then serve.
