Minnesota Swedish Meatballs




This is the traditional swedish meatball with oats and lamb. I had this with mushrooms, egg noodles and a simple sauce as in the picture. If you don't have lamb, you can substitute for another pound of beef or ground pork.

Ingredients
1 pound ground lamb
1 pound extra lean ground hamburger
1 1/2 cups half and half
2 cups oats
2 eggs beaten 
6 tablespoons butter
1 small onion, minced
1 teaspoon nutmeg
1 teaspoon salt
1/2 teaspoon pepper
Cooked egg noodles (optional) 
Whole mushrooms (optional)

Sauce 
2 cups cream
3 tablespoons flour
1 teaspoon salt
1/2 teaspoon pepper
3 tablespoons workshire sauce  

Instructions 
1. In a large bowl, mix oats, milk and set aside.
2. In a large skillet, add 2 tablespoons butter and onions and cook for about 4 minutes.
3. Add the onions, meat, egg, salt, pepper and nutmeg to the oats and milk and mix everything together and chill in for for 1 hour to set up.
4. Put the remaining butter in the same skillet you cooked the onions in and heat to medium high.
5. Roll the meat mixture into 1 inch balls and cook in batches. Have a oven or another pan on low to keep them warm till you cook them all.
6. Mix all the ingredients for the sauce and cook on medium, constantly stirring till it simmers and thicken.
7. Service meatballs with sauce and optional noodles and mushrooms.
