Potato Salad

Potato Salad 




This is a very easy dish to make with little ingredients. 

Ingredients 
4 pounds of red potatoes (peeled, boiled and cut into 1 -1 1/2 inch chunks) 
1 cup sour cream
1 1/2 cups mayonnaise
5 hard boiled eggs (peeled and sliced)
1 small yellow onion (diced)
1 1/2 teaspoon salt
1 teaspoon pepper
3 celery sticks (chopped)
1/2 bell pepper (diced) 
pinch paprika for topping (optional)

Instructions 
1. In a large bowl, put potatoes, onions, celery, eggs and peppers and lightly mix.
2 In another bowl, put sour cream, mayonnaise, salt, pepper and mix well. 
3. Combine all the ingredients into 1 bowl and mix well.
4. Refrigerate for 4 hours and then serve.
