Olive Salad

 Olive Salad I originally was trying to find where I could buy a jar and could not find it anywhere, so I ended up making it and it turned out really good! Ingredients 1 can of black olives, 6 ounce 1 jar of green olives, 16 ounce 4 teaspoons minced garlic 1/2 cup of chopped giardiniera  2 tablespoons of chopped fresh parsley 1/4 cup olive oil 3 tablespoons red wine vinegar  2 tablespoons of chopped pickled cocktail onions 1/4 teaspoon celery salt 1 teaspoon dried oregano  1 teaspoon dried basil 1/2 teaspoon pepper Instructions 1.In a large bowl, pour the black and green olives and crush with your fingers. A knife chopps it up too fine.  2. Add all the rest of the ingredients and mix well. 3. Serve on sandwiches, pizza or almost anything. Can be placed a in jar in the frig for future use. Tater Tot Casserole

 Tater Tot Casserole  This recipe is normally made with cream of mushroom soup, but way more tastier making it yourself! Ingredients Sauce 2 tablespoons butter 1 onion, diced 2 cloves garlic, minced 8 ounces of fresh mushrooms, sliced 2 teaspoon thyme 1/4 cup dry white wine 4 tablespoons all-purpose flour 2 cups chicken broth or stock 1 teaspoons salt 1/4 teaspoon black pepper 1 beef bouillon cubes, crumbled 1/2 cup heavy cream 1 tablespoon worcestershire sauce Main dish 1 pound extra lean beef 15 ounces of beans, canned, frozen or fresh ( I use frozen) 2 cups frozen tater tots 8 ounces shredded sharp cheddar cheese Chopped fresh parsley Instructions 1. Heat butter in pot over medium-high heat until melted. Sauté onions and garlic for 2 to 3 minutes until softened. 2. Add mushrooms and thyme, cook for 5 minutes.  Potato Salad This is a smaller recipe for 4 people. Ingredients 2 1/2 pounds of peeled Yukon Gold or Klondike Goldust potatoes 1 cup mayonnaise  1/2 cup sweet pickle relish 1 tablespoon yellow mustard 1 1/2 teaspoons apple cider vinegar  1 1/2 teaspoons celery seeds 1 1/2 teaspoons fresh chopped dill 1/4 teaspoon paprika 3-4 hard boiled eggs 2 celery stick, diced 1/4 cup sweet onion, diced 3 radishes, thinly sliced 2 teaspoons salt (divided) 1/4 teaspoon pepper Instructions  1. Cut the potatoes into quarters and place them in a large stock pot. Fill the pot with cold water until it is 1 inch over the top of the potatoes. Set the pot over high heat and bring to a boil. Once boiling, add 1 teaspoon of salt and cook the potatoes for 13-15 minutes, until fork tender. 2.  Hot Dago These are originally from Saint Paul, Minnesota and pretty much a lost recipe, took me a while to track down and find to the original. This is the sauce, Dago burger and the hot sausage recipes. Lots of ingredients, but fairly easy to make. You start by making the hot sausage. Hot Dago patties 2 pounds ground beef 2 ground Italian pork hot sausage 1/3 cup bread crumbs 2 teaspoons salt 1 teaspoon pepper 1/4 cup parmesan cheese Keiser rolls or a loaf of french bread cut into sections 8 ounces shredded mozzarella cheese 2 bell peppers, cut and sauteed in butter (optional)  Sauce 2 tablespoons of olive oil 1 cup of mushrooms sliced 1 cup onions chopped 1 tablespoon of garlic minced  1 cup of water 29 oz of crushed tomatoes 6 oz tomato paste 2 teaspoons basil ½ teaspoon oregano 1 cup pitted chopped olives ¼ teaspoon black pepper 1 tablespoon Dijon mustard ½ chopped fresh parsley  3 oz chopped sliced pepperoni   Italian Hot Sausage  2 pounds ground...

Hash Casserole

Hash Casserole  I was looking for a way to use a can of hash and come up with this recipe. Ingredients 1 can hash, 15 ounce 1 onion, diced 8 eggs 1 tablespoon butter 4 cups of 1/2 inch cubed bread 1 1/2 cups shredded swiss cheese, divided 1 tablespoon garlic, minced  1/2 teaspoon salt 1 teaspoon whole grain mustard 1/4 teaspoon cayenne pepper 1/4 teaspoon pepper 1 red bell pepper, diced 1 1/4 cups cream or evaporated milk 1/4 cup chopped parsley  1/2 cup chopped tomatoes  Directions  1. Preheat over to 350 degrees 2. In a large skillet, put butter, onions, bell pepper and garlic and cook for about 5 minutes. Then add the hash to the skillet and cook for another 4 minutes, then set aside. 3. In a large bowl, add milk, eggs, mustard, salt, pepper and mix well. Chicken Curry Pasta Ingredients 1 pound boneless skinless chicken breast, chipped into bite size 1 tablespoon minced garlic 2 tablespoons butter 1 small yellow or white onion chopped 2 tablespoons yellow curry powder 1 tablespoon Thai red curry paste 1/2 cup yogourt  15 - ounce coconut milk canned  1 teaspoon turmeric  1/2 cup chicken broth 1 tablespoon brown sugar 1 teaspoon fish sauce 2 tablespoons lemon juice 1 teaspoon salt  1/4 cup cilantro roughly chopped for topping 1 pound of cooked pasta Directions  1. Heat the butter in a large pot over medium low heat. Add the onions and minced garlic and cook for a few minutes until the onions are fragrant and softened. 2. Add the chicken and cook for 2-3 minutes, browning it a little. Add curry powder and paste, turmeric, brown sugar, lemon, juice, fish sauce, salt and  cook for 3-5 minutes. 3.
