 Hot Dago





These are originally from Saint Paul, Minnesota and pretty much a lost recipe, took me a while to track down and find to the original. This is the sauce, Dago burger and the hot sausage recipes. Lots of ingredients, but fairly easy to make. You start by making the hot sausage.

Hot Dago patties
2 pounds ground beef
2 ground Italian pork hot sausage
1/3 cup bread crumbs
2 teaspoons salt
1 teaspoon pepper
1/4 cup parmesan cheese
Keiser rolls or a loaf of french bread cut into sections
8 ounces shredded mozzarella cheese
2 bell peppers, cut and sauteed in butter (optional) 

Sauce
2 tablespoons of olive oil
1 cup of mushrooms sliced
1 cup onions chopped
1 tablespoon of garlic minced 
1 cup of water
29 oz of crushed tomatoes
6 oz tomato paste
2 teaspoons basil
½ teaspoon oregano
1 cup pitted chopped olives
¼ teaspoon black pepper
1 tablespoon Dijon mustard
½ chopped fresh parsley 
3 oz chopped sliced pepperoni  

Italian Hot Sausage 
2 pounds ground pork
1 tablespoon fennel seeds
1/2 teaspoon black pepper
1-2 teaspoons cayenne pepper (add a 2nd teaspoon if you like it more spicy)
2 teaspoons paprika
1 teaspoon smoked paprika 
1 teaspoon crushed red pepper flakes
2 teaspoons powdered garlic
2 tablespoons dry red wine

Directions 
1. Make the Italian hot sausage first. Take the 2 pounds of pork and mix all ingredients in a bowl, cover and put in frig for 1-2 hours.
2. Make the sauce and combine all ingredients, bring to boil and reduce to simmer for 40 minutes, then reduce to low to keep warm till the patties are done.
3. For the dago patties, in large bowl, combine the hot sausage, hamburger and all the other hot dago patty ingredients and mix well. (Don't combine the sauce, you will pour over patties later.)
4. Heat a pan to medium and form patties. When it gets close to done (165 degree internal temperature) put shredded mozzarella cheese on each patty, pour in about 1/2 cup of water to make steam and cover to melt the cheese for additional 2-3 minutes.
5. Slice up the bread, place a patty on each one, pour sauce and options sauteed bell peppers and enjoy!
