Hash Casserole

Hash Casserole 




I was looking for a way to use a can of hash and come up with this recipe.

Ingredients
1 can hash, 15 ounce
1 onion, diced
8 eggs
1 tablespoon butter
4 cups of 1/2 inch cubed bread
1 1/2 cups shredded swiss cheese, divided
1 tablespoon garlic, minced 
1/2 teaspoon salt
1 teaspoon whole grain mustard
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1 red bell pepper, diced
1 1/4 cups cream or evaporated milk
1/4 cup chopped parsley 
1/2 cup chopped tomatoes 

Directions 
1. Preheat over to 350 degrees
2. In a large skillet, put butter, onions, bell pepper and garlic and cook for about 5 minutes. Then add the hash to the skillet and cook for another 4 minutes, then set aside.
3. In a large bowl, add milk, eggs, mustard, salt, pepper and mix well. Then add the bread, swiss cheese and the hash mixture. 
4. In a 8x8 baking dish, pour the mixture in and spread evenly.
5. Bake for 30 minutes at 350 degrees,
6. Pull out and spread remaining swiss cheese on the top and bake for another 10 minutes. 
7. Let rest for 5 minutes and spread tomatoes and parsley over the top and serve.
