Chicken Curry Pasta
Ingredients
1 pound boneless skinless chicken breast, chipped into bite size
1 tablespoon minced garlic
2 tablespoons butter
1 small yellow or white onion chopped
2 tablespoons yellow curry powder
1 tablespoon Thai red curry paste
1/2 cup yogourt
15 - ounce coconut milk canned
1 teaspoon turmeric
1/2 cup chicken broth
1 tablespoon brown sugar
1 teaspoon fish sauce
2 tablespoons lemon juice
1 teaspoon salt
1/4 cup cilantro roughly chopped for topping
1 pound of cooked pasta
Directions
1. Heat the butter in a large pot over medium low heat. Add the onions and minced garlic and cook for a few minutes until the onions are fragrant and softened.
2. Add the chicken and cook for 2-3 minutes, browning it a little. Add curry powder and paste, turmeric, brown sugar, lemon, juice, fish sauce, salt and cook for 3-5 minutes.
3. Add the coconut milk, yogurt, chicken and let simmer for 15-20 minutes or until the chicken is fully cooked.
5. Top with fresh cilantro, serve over cooked pasts.
