Ultimate Chicken Salad


I really enjoy chicken salad and have always bought it as the deli in the past, so I thought I would try making it and this was my first attempt. I find that boiling chicken for shredding purposes works extremely well, but you can cook it other ways.

Ingredients 

2 pounds cooked and shredded chicken breasts
1 cup mayonnaise
1/4 cup sweet relish
2 hard boiled eggs
2 tablespoons chopped parsley 
2 celery stalks (chopped) 
3 green onions (chopped)
1 tablespoon lemon juice 
1 tablespoon Dijon mustard 
1/2 teaspoon salt
1/2 teaspoon pepper
12 pieces of bread for sandwiches (optional)
Lettuce for sandwiches (optional)


Instructions

1. Prepare hard boiled eggs. Boil for 2 minutes, cover and remove from heat for 20 minutes. Then cool down with ice water.
2. Put chicken breast in a pot and boil for 30 minutes, then cool down with cold water.
3. As the chicken is cooking, take all the ingredients in a large bowl and mix well.
4. Take chicken and rip it apart with your fingers in shreds. Add and mix to the rest of the ingredients as you shred it apart.
5. Serve on a plate or in a sandwich.
