Battered Potato Wedges
Ingredients
6 large potatoes
1 1/2 cups water
1 cup all purpose flour
1 teaspoon oregano
1 teaspoon paprika
1 teaspoon powered garlic
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon cayenne pepper (optional for spicy)
Instructions
1. Get a big bowl of cold water ready, this is what you will use to put your cut potatoes in.
2. Heat oil or fryer to 350 degrees.
3. Peel and cut pantoates into wedges, put in the bowl of water and let sit for 30 minutes.
4. Heat a large pot of boiling water, now put all the cut wedged potatoes into the boiling water and cook for 5 minutes.
5. Drain and rinse the pantoates with cold water to cool them down.
6. Mix the water, flour, salt, oregano, paprika, garlic, pepper in separate bowl and put aside.
7. In batches with a tongs, put hand full of wedged potatoes into the mixture and stir them around till they are well coated.
8. Drop them into the oil and stir as you drop them, so the don't stick together.
9. Cook till golden brown, which is about 8 minutes.
