Mexican Tater Tot Casserole
Mexican Tater Tot Casserole
This was a experiment that turned out really good! Lots of flavor!
Ingredients
32 ounce package of frozen tater tots
1 package taco seasoning
1 package taco seasoning
2 cloves garlic
1 shallot diced
1 1/2 cups half and half
1 tablespoon cornstarch
1 teaspoon yellow mustard
4 ounces of black olives, sliced
1 pound lean ground beef
1 pound lean ground beef
4 ounces cream cheese
8 ounces smoked cheddar cheese, shredded
8 ounces sharp cheddar cheese, shredded and divided in half
4 ounce can of green chillies
4 ounce can of jalapenos or 2 fresh jalapenos diced
1 medium onion, diced
1 bell pepper, diced
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1 cup corn
12 ounces black beans
15 ounce can diced tomatoes, drained (optional as a topping)
Instructions
1. You will need 3 pans and a 9 x 13 casserole dish. Preheat oven to 375.
2. In one pan brown ground beef and following the instructions on the taco seasoning, then when done put a aside.
3. In another pan add the tablespoon of butter, heat pan to medium high and add the onions and bell peppers and cook for 5 minutes, then set aside.
3. In a 3rd pan, add he half and half , the cornstarch and stir till dissolved. Heat to medium and add the cream cheese, smoked cheddar cheese, half the cheddar cheese and cook till melted, constantly stirring. Turn heat to low and add garlic, jalapenos, green chilies, yellow mustard. salt, pepper and cook for another 5 minutes and pull off heat.
4. In the casserole dish, spread the ground beef all across the bottom, they add the black olives, bell peppers and onions. Now add the the tater tots, then the cheese sauce.
4. Spread the black beans and the other half of the cheddar cheese across the top.
5. Cover and bake for 30 minutes at 375, then pull cover off and cook for another 10 minutes.
6. Pull out of oven, top with optional diced tomatoes and rest for 5 minutes, then serve.
