Wild Rice Apple Meatloaf
This was a experiment that turned out really good. I had this at a local restaurant and could not find anything on the internet. I thought maybe I can contract the restaurant and see if I could get the recipe? But I doubt they would of gave it to me, so I came up with my own recipe.
Ingredients
2 pounds extra lean ground beef (I use sirloin)
1 large sweet onion (finely chopped)
2 tablespoons butter
1 cup breadcrumbs
1 cup granny smith apples (peeled, cored and finely chopped)
1 cup cooked wild rice
1/4 teaspoon dry mustard
3 eggs (beaten)
1 tablespoon chopped parsley
1/2 teaspoon black pepper
1 teaspoon salt
1 tablespoon dried parsley
1/2 teaspoon garlic
1 tablespoon dried parsley
1/2 teaspoon garlic
1/4 teaspoon allspice
1 tablespoon worcestershire sauce
1/4 cup ketchup
1/2 cup whole milk
8 ounces shredded cheddar cheese
Side Dish
6 cups cooked mash potatoes (optional side dish)
Sauce Ingredients
1 cup ketchup
1/2 cup apple juice or cider
2 tablespoons brown sugar
1/2 teaspoon ground nutmeg
Instructions
1. Preheat oven to 350.
2. Heat a skillet to medium high with butter and onions and cook for about 5 minutes, then set aside.
3. In a large bowl, mix all the ingredients except for the sauce and mix well with your hands.
4. In a 1 1/2 quart glass baking dish, put the loaf mixture in and press it till it fills the dish.
5. Bake uncovered for 1 hour or till the internal temp reaches 165.
6. Pull out of oven and our the sauce from all over the top, then cut and serve.
Sauce Instructions
1. Put all ingredients in a sauce pan and high, stirring constantly till it bubbles, then pull off heat and set aside. Do this 20 minutes before you loaf is done.
