Fettuccine and Chickpeas
Fettuccine and Chickpeas
I have been sitting on a case of canned chickpeas for a while that needed to be used, so I came up with this dish. Healthy and meatless.
Ingredients
1 pound fettuccine
2 tablespoons butter
1 can of chickpeas (15 ounce)
1 can of diced tomatoes (15 ounce)
1 cup shredded parmesan cheese
1 small onion, diced
1 bell pepper, diced
1 tablespoon minced garlic
2 teaspoon rosemary
1/2 teaspoon salt
1/2 teaspoon pepper
2 sliced green onions
Directions
1. Cook fettuccine according the box instructions.
2. Heat a large skillet to medium high and add the butter, onion, chickpeas, bell pepper and garlic for about 4 minutes and reduce heat to low.
3. Add the cooked fettuccine to skillet and stir.
4. Add the salt, pepper and rosemary, stir and cook for another 4 minutes.
5. Turn off heat and mix in the parmesan cheese.
6. Serve and top with tomatoes and green onions.
