Blueberry Hand Pies
Found a big bag of blueberries in the freezer that I needed to use and did not want to make a big pie, because it does not get eaten fast enough, so I made these.
Ingredients
3 cups blueberries
1/2 cup granulated sugar
3 tablespoons cornstarch
2 teaspoons lemon juice
1 teaspoon vanilla extract
3 sheets of thawed puff pastry
1 egg beaten
2 cups powdered sugar
3 tablespoon cold water
Directions
1. Place blueberries, sugar, corn starch, lemon juice and vanilla extract in sauce pan, stir well and bring to boil, then remove from heat and let cool.
2. Preheat oven to 375 degrees and lined 2 baking sheets with parchment paper.
3. Cut each puff pastry sheet into 4 equal squares.
4. Take egg wash and coat the outer egg of the puff pastry, this will help it stick and put 2 tablespoons of filling in each one.
5. Fold and use a fork and press all the way around the edge to seal.
6. Bake for 20-25 minutes until they are golden brown.
7. Mix the powdered and water in a small bowl, mix well until smooth and drizzle over each pic.
8. Let cool for 10 minutes and serve.
