Mexican Tater Tot Casserole

Mexican Tater Tot Casserole  This was a experiment that turned out really good! Lots of flavor!  Ingredients 32 ounce package of frozen tater tots 1 package taco seasoning 2 cloves garlic 1 shallot diced 1 1/2 cups half and half 1 tablespoon cornstarch  1 teaspoon yellow mustard 4 ounces of black olives, sliced 1 pound lean ground beef 4 ounces cream cheese 8 ounces smoked cheddar cheese, shredded 8 ounces sharp cheddar cheese, shredded and divided in half 4 ounce can of green chillies 4 ounce can of jalapenos or 2 fresh jalapenos diced 1 medium onion, diced 1 bell pepper, diced 1/2 teaspoon salt 1/4 teaspoon pepper 1 tablespoon butter 1 cup corn 12 ounces black beans 15 ounce can diced tomatoes, drained (optional as a topping) Instructions 1. Italian Spicy Sausage

Italian Spicy Sausage  I love Italian hot sausage, but impossible to get anything good where I live at a grocery store. If you want it really spicy, you can double the cayenne pepper. Use to make pizza, patties, meatballs, so lots of uses! Ingredients 1 pound ground pork 1 teaspoon fennel seed 1 teaspoon salt 1/2 teaspoon crushed red pepper flakes 2 teaspoons paprika  2 teaspoons garlic powder 1 teaspoon smoked paprika  1/2 teaspoon pepper 1 tablespoon dry red wine 1 teaspoon cayenne pepper Instructions  1. In small bowl, mix all the dry ingredients and set aside. 2. In a large bowl, mix the pork and red wine together. 3. Take the bowl of dry ingredients and mix it in with the meat.
