Ricotta Cheese Blintzes






 This is something I always wanted to make and you think of it as a pancake with cheese rolled up in the middle. The hardest part is rolling them all up and making them consistent as you see from the pic, I even had a hard time doing.

Blintzes batter
4 large eggs (room temperature, beaten)
1/2 cup water
1/2 cup milk
1/2 teaspoon salt
1 tablespoon sugar
1 cup all-purpose flour
1 cup butter (for frying)
3 tablespoons of butter for baking

Filling
1 pound ricotta
1 tablespoon butter
1 large egg yolk
2 teaspoons vanilla extract
1/4 cup sugar
Garnish sour cream or fruit syrup

Directions
1. Heat a 10 inch non-stick skillet with a little butter at middle low heat.
2. Mix you batter up very well and pour a ladle full into the pan and cook for about 2 minutes and flip over and cook other side for about 10 seconds.
3. Take out of pan and put on a towel or I use wax paper.
4. Keep on doing this till you run out of batter.
5. Preheat oven to 350 degrees.
6. Take a 9x13 baking dish and cut 3 tablespoons of butter and spread. This will melt and give a buttery base.
7. Take each one of your Blintzes and put 1-2 tablespoons of filling and roll up and put in baking dish. Keep on repeating this till you run out of batter.
8. Place dish in oven for 12 minutes.
9 Take out of oven, let cool for about 2 minutes and plate and put your toppings on.
