Coconut Chicken Curry Rice
Easy tasty meal!
Ingredients
2 tablespoons olive oil
1 onion diced
1 red bell pepper or 2 jalapenos if you want to spice it up
1 lb boneless skinless chicken breast cut into 1-inch pieces
4 cloves garlic, minced
2 teaspoons curry powder
1 teaspoon coriander
1 cup uncooked long grain white rice
1 cup chicken broth
1 14 ounce can coconut milk
1 teaspoon salt
1 teaspoon minced ginger
2 tablespoons basil
Directions
1. In a large skillet with oil, add the onion, pepper and garlic and sautee for a couple of minutes.
2. Add the chicken and cook for 5-6 minutes until pink is gone.
3. Add the curry powder, coriander.broth, coconut milk, salt and rice.
4. Cover and simmer over low heat for 15-20 minutes or until rice is tender.
5. When complete top with ginger and basil and serve.
